Blanch spinach and green peas

First of all, heat water in a vessel. Add fresh green peas and cleaned spinach leaves to it and boil lightly for a few minutes. After this, immediately take out the spinach and peas from hot water and filter them thoroughly in a sieve.

This reduces the rawness of the vegetables and the green color of spinach and peas also remains intact to a great extent.

Give perfect binding with gram flour and spices

Take out the green paste in a big bowl. Now add gram flour, cornflour and breadcrumbs. Add salt and red chili powder as per taste.

Mix all the ingredients well with the help of hands or spoon. The prepared mixture should be so hard that it can be easily shaped into kebabs.

If the mixture seems too wet, a little more breadcrumbs or gram flour can be added.

Fill with melty mozzarella cheese

Now take a part of the mixture in your hand and shape it like a round tikki. Place a small piece of mozzarella cheese in the middle.

Now seal the thing completely inside by closing the mixture from all sides. Give the kebab a round or slightly flat shape. If you want, you can make it more attractive by adding a piece of cashew on top.

Prepare all the kebabs in the same manner.

Instead of deep frying, do shallow frying like this.

Heat a non-stick pan or tawa and add some oil to it. Once the oil is hot, carefully place the kebabs in the pan.

Fry the kebabs on low to medium flame until they become golden and slightly crispy on both sides. Avoid turning them again and again, so that the kebab does not break and the stuffing does not come out.
